
Homemade gazpacho
The perfect spicy refresher during the warmer days
Originating from Spain, this cold soup, made from raw vegetables and herbs, is a must try. Gazpacho not only satisfies your hunger, quenches your thirst, and gives your body a nutritious boost. Easy to whip up at home while enjoying beautiful warm weather.

Ingredients (for 4 persons)

1 Red chili pepper
2 Cucumbers
2 Red pepper
500g peeled tomatoes
5 Ripe Pomodoro tomatoes
1 Garlic clove
5 Basil leaves
1 Slice of white bread, crust removed
250ml Tomato juice
Splash of vinegar
Method

Method
- Cut the seeds from the pepper and the red chili pepper.
- Peel the cucumber.
- Cut everything into small cubes.
- Combine all ingredients and blend with a hand mixer or blender until smooth.
- Pour mixture through a strainer.
- Season with a pinch of salt and, if desired, some black pepper from the grinder.
This gazpacho combines nicely with lobster, Dutch shrimps, or opt for goat cheese for a vegetarian option.
