Château St. Gerlach’s vibrant gardens provide the foundation for a dining experience based on fresh, locally-grown produce. Guests wishing to remain in the spa can enjoy a light lunch poolside or on the terrace, whilst those looking to experience the historic Château building can visit the informal, Bistrot de Liège or fine-dining establishment, Restaurant Château St. Gerlach.

Spa & Wellness St. Gerlach serves a range of light snacks and drinks, daily from 12:00 to 17:30. 

Bistrot de Liège - Regional dishes with artisanal flair

Serving light, regionally-inspired dishes, the cosy Bistrot de Liège is located in the kitchen, dining and reception rooms of Château St. Gerlach’s last aristocratic resident, Baron de Selys de Fanson. The open kitchen with traditional flagstone floor, antique stove and original Liège-style pantry, all create an informal, homely atmosphere, where guests can enjoy lunch, dinner or simply a cup of coffee accompanied by a slice of homemade Limburg vlaai.

During warmer weather, tables are laid outside in the former Château quadrangle, allowing guests to enjoy the pretty fountain and decorative gardens.

Renowned for exceptional quality and outstanding service, Restaurant Château St. Gerlach’s à la carte menu is masterfully designed to delight both the eyes and palate. Occupying three of the Château’s traditional reception rooms, the visually impressive dishes are inspired by the opulent furnishings and elaborate frescoes. Guided by French classics, Chef de Cuisine Otto Nijenhuis and his team, use innovative techniques and modern influences to showcase the freshest, most organic products derived from the estate gardens and local countryside.
During the summer, diners spill out onto the elegant terrace, overlooking the impressive grounds.
