Ginger Shaved Ice with Marinated Oranges

Detox for Dessert

Boosting our immune system is never an unnecessary luxury, especially during this period. Chef banqueting, Jeroen Trimbos, prepares a fresh dessert that’s fully loaded with vitamin C and a healthy dose of alkalizing minerals to help balance out the body. Healthy and delicious, it’s a match made in heaven! For best results, prepare the ginger shaved ice a day in advance.

Jeroen Trimbos – Chef Banqueting Château St. Gerlach

Ingredients (for 4 persons)

4 oranges

Fresh mint

Small piece of Lemon grass

Small piece of fresh ginger

100 ml ginger syrup

300 ml water

Method

  1. Prepare the shaved ice with ginger a day in advance.
  2. Clean and grate the ginger into a freezer appropriate bowl. Mix in the ginger syrup, water and lemon grass. Cover and place in the freezer. Stir every 30 minutes for the first 4 hours.
  3. Use a serrated knife to peel the oranges. Slice oranges into wedges and place into a bowl.
  4. Squeeze any remaining juice into the bowl to marinate the orange wedges.
  5. Serve the shaved ice with the marinated oranges. Top with chopped mint and enjoy!
